Rebecca, There are a few specialty shows for a specific breed such as the Old English Game Jamboree. But most are general shows that allow all breeds, large fowl and bantam, as well as waterfowl. Show halls will have cages set up for all entries in the various ABA and APA categories. You are normally welcome to walk around and look at the entries and talk to the exhibitors until they close the cage rows for judging. Even then you can usually watch from a distance. And often the exhibitors will gather after the judging to discuss the placements of the birds. Most folks are eager to discuss their birds with new people interested in the breed. Go and enjoy the show. You will learn a lot about the breed and showing by going to your first show meeting new people and enjoying the fellowship.
