Thanks for all of the birthday wishes . . . it was a good day . . . we had a measurable rain finally, and I left work at a reasonably normal time for the first time in weeks, and there is a flourless chocolate cake waiting to be eaten . . . what more could a guy ask for . . . except a few lavendar chicks maybe! ;)

Hope you had a great birthday Michael. Glad I checked in tonight or would have missed it completely! Keep up the good work with the birds and here on the forum. Hope you get your lavenders soon. That is a project I had thought of many times over the years, but could not justify the space when the existing varieties still need so much work. So I\'m definitely glad to see others doing the work.

The recipie as requested! Thanks for all of the well wishes.
Flourless Chocolate Cake
10 Tab Margerine
1# Semi Sweet Chocolate
1 Tab instant coffee
5 eggs – separated
1 Tab sugar
• Melt 1st 3 ingredients together in double boiler
• Cool chocolate mixture to room temp. Stir in egg yolks one at a time until smooth.
• Beat whites to soft peak. Add sugar. Beat to stiff peak.
• Fold ¼ whites into chocolate mixture then carefully fold that into the rest of the whites just until uniformly mixed.
• Grease 8 inch round cake pan and line bottom with parchment or wax paper.
• Set cake pan in pan of water.
• Bake 350 for 35 minutes.
• Cool cake in pan on rack then refrigerate for several hours or overnight.
• Turn out onto plate and dust with powdered sugar. (If it does not come easily out of the pan you may set pan in warm water briefly)
